Kaukawa Workshops are educational experiences designed to deepen understanding of cacao through knowledge, practice, and direct engagement.

Each workshop offers a structured learning environment, combining theory and guided experience — with a focus on origin, preparation, and responsible use of cacao.

Our workshops are not ceremonies. They are spaces for learning, clarity, and connection through knowledge.

 

1. Ceremonial Cacao

Foundation & practice

An educational workshop exploring what ceremonial cacao is, its cultural context, and how it is prepared with integrity and respect.

Participants learn about cacao in Peru, biodiversity, and Kaukawa’s standards for ceremonial cacao, followed by a guided preparation and one cup as part of the learning process.

Duration: 90 minutes
Includes: Printed material, cacao preparation, 1 cup, certificate of participation

 

2. Preparing Cacao — Methods & Practice

A practical workshop focused on how to prepare cacao with intention, technique, and versatility — for both traditional and everyday use.

Participants learn ratios, temperature control, and preparation methods, working directly with cacao to understand consistency, texture, and flavor,  introduces cacao as a biofunctional food, exploring its role beyond chocolate.

We explore both ancestral recipes and modern approaches, including:

  • Traditional preparation with molinillo and espumaderas
  • Cacao with local ingredients from Cusco
  • Modern preparations & biofunctional pairings such as cordyceps

Duration: 90 minutes
Includes: Hands-on preparation, tasting, and practical guidelines


3. Introduction to Craft Chocolate

An educational workshop introducing fine chocolate and how to recognize quality through origin, process, and flavor.

Participants explore the difference between industrial and craft chocolate, learn how to read labels, and develop a sensory understanding of flavor, origin, and production methods.

The session is supported by internationally recognized tools, including the ICCT profile map of flavor and the Cacao of Excellence flavor wheel, offering a structured approach to tasting and evaluation.
