Our ceremonial cacao is crafted from carefully selected Chuncho cacao beans, a rare variety native to Cusco, Peru. This ancient cacao has been preserved for over 3,000 years by the Matsigenka Indigenous people and local communities. Grown in the lush rainforests beneath the highlands of Machu Picchu, Chuncho cacao thrives at the highest altitudes where cacao can grow. It is known for its exceptional genetic diversity—with the widest range of cultivars—and for having the highest natural cacao butter content of any cacao variety.
Our cacao paste is made with 70-75% fermented cacao beans, sun-dried, roasted at a low temperature of -90 °C, and all made in Cusco.
After the manufacturing of our cacao is done, a blessing ritual for the cacao batch is made following the teachings of the Q'ero Nation, the last 'ayllu' or Inca community in Cusco.
The profile of flavour of our cacao includes floral, citric fruit notes, nutty notes, strong cacao flavour, and dark fruit attributes. Learn more about the Wheel of Flavour of Cacao of Excellence to describe the profile of flavour of a cacao paste.
The storage time of this product is 18 months since its elaboration. It is recommended to keep the cacao at a temperature between 14 Cº and 18 Cº (50ºF to 66ºF) and preferably in a cool and dry place.
