Certifications & Expertise
We commit to deliver the best quality to our consumers. Our cacao beans are sourced from organic certified farms, impulsing the work of chemical-free plantations.
The certifications we have include:
- Certified Organic by IMOcert
- Fairtrade Certified, ensuring ethical sourcing and support for farming communities
- Cadmium-Free, tested and approved by AGQ Labs and IAS laboratories.
- Laboratory analysis test by SAT accredited by INACAL for the cacao essential oil.
Kaukawa cacao commits to health, environmental responsibility, and the traceability of our cacao beans, sourced mainly from La Convencion, Cusco, and in a less scale from the other 15 regions of Peruvian teerritory where original genotypes of cacao have been investigated, where we envision to expand our work.
Note: we also work with independant cacao farmers, for whom to certify their cacao parcels means a significant investment. We have visited their farms, and we can guarantee their agroforestal and polyculture practices to ensure a superior cacao bean quality.

Global mutual language about Cacao
- The plant of cacao belongs to the family of Malvaceae.
- Cacao is inside of the Theobroma genres of plants: Theobroma cacao, Theobroma bicolor (macambo), Theobroma grandiflorum (Copoazú), Theobroma subincanum.
- Theobroma Cacao refers to the specie, inside these genre of plants.
- Cacao varieties refers to the 25 varieties investigated by Alliance Bioversity Ciat until nowadays, reserach made by Thomas Evert.
Trust: Fiorella, certified holistic educator
From ritual to laboratory, I (Fiorella) have been learning cacao in every supply chain area for the past 6 years, with base in Peru. This last year (2025) I have been qualifying myself with leader global institutes who seek the improvement of the cacao quality from the bean to the bar.
My certifications include:

Cacao of Excellence trainee: completion of the 2025 Awards Training at the Cacao of Excellence R&D Laboratory and Training Center in Rome, Italy during the period from June 2nd to June 27th 2025.
- Chocolate & Cacao Taster: certification obtained by UNALM University from Peru in February 2025.
- International Institute of Chocolate & Cacao Tasting: completion of level 1, studied with Professor Maricel Presilla in Lima at the frame of Salon of Chocolate & Cacao.
